It’s no secret that I’m a huge fan of our InstantPot. After years of using a slow cooker, it’s revolutionized the weeknight meal for us allowing for deliciously tender, pull-apart meat in under an hour. These InstantPot beef brisket tacos are the most delicious, and come with a 50 minute cook time.
Ultimately, I’ve found with most pressure cooker recipes that when they say “ready in 24 minutes”, it’s actually ready in over an hour because of the prep and sauté work, and the time required for the InstantPot to come up to pressure. With that in mind, one of the best things about this brisket taco recipe is that there is very little prep work required. All you need to do is chop the onion, pick the coriander and pile it all in to the cooker.
